Mandarin Orange Cake

what you need
  • 1 yellow cake mix
  • 3 eggs
  • 3/4 cup oil
  • 1 can mandarin oranges & juice
  • 1 tub Cool Whip
  • 1 tsp. vanilla
  • 1 sm. pkg. vanilla instant pudding
  • 1 can (20 oz.) crushed pineapple with juice
make it
Beat cake mix, eggs, oil & can of mandarin oranges for 3 min. on medium speed. Oranges will break up during beating.

Bake in greased 9x13-inch pan at 350°F for 30-35 min. Cool completely

Mix Cool Whip, vanilla, vanilla pudding & pineapple with juice. Blend thoroughly and spread on top of cooled cake. Refrigerate.

Rated  by a cook on 5/7/2008 I made this cake for a potluck for church, and it was wonderful! It got gone in a hurry! I got several positive comments on it! It is a great summer dessert! The easy prepartion is a just an added bonus! I would highly recommend this treat!
