Banana Bread

what you need
  • 2 cups sugar
  • 1 cup shortening
  • 3 extra large eggs
  • 8 oz. Philadelphia Cream Cheese, softened
  • 4 cups all purpose flour
  • 2 tsp. salt
  • 2 tsp. baking soda
  • 4 cups mashed bananas (approx. 5-6 large)
  • 1 cup nuts, optional
make it
Preheat oven to 350 degrees F. Grease 2 loaf pans. Cream together: sugar, shortening, eggs and softened cream cheese. Sift together: flour, salt, baking soda and add to creamed mixture. Add bananas to above mixture and beat on slow until smooth. Add nuts if desired.

Divide batter into 2 loaf pans.

Bake for 1 hour. Check center with toothpick to check if done.
Notes
My family loves this bread and my grandson won 1st prize at the fair when he made it by himself at age 12.
