Potato Chip Cookies

what you need
  • 1 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups sifted flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 cup chopped nuts (optional)
  • 1 cup crushed potato chips
make it
Cream shortening and sugars until fluffy. Add eggs and vanilla - beat well. Blend flour, salt & baking soda - stir into egg mixture, until completely mixed. Add potato chips and nuts.

Drop by tsp. on UNGREASED cookie sheets.

Bake at 350 degrees F 12 - 15 minutes.
Use slightly stale or broken chips.

Rated  by a cook on 2/18/2009 I used some homemade chips from a local steak house. I also used a sugar substitute and 1/2 and 1/2 whole wheat/ white flour. The second half of the batch I added butterscotch chips. Very good both ways!
