Cream Cheese Lemon Cookies

what you need
  • 1/4 cup margarine or butter, soften
  • 1 pkg. (8 oz.) Philadelphia Cream Cheese (Light or Regular) either is good, softened
  • 1 egg yolk
  • 1/4 tsp. vanilla extract or flavor of cookies you are making
  • 1 cake mix (vanilla or lemon)
make it
Mix together with mixer butter and cream cheese. When well blended add egg yolk and vanilla. Then mix in cake mix by hand.

Drop on cookie sheet using teaspoon.

Bake at 350°F for 5 to 10 minutes.

Rated  by hparker30 on 1/6/2007 These cookies are amazing! I used a lemon cake mix and they turned out tasting like lemon cheesecake. I had to use a hand mixer to blend in the cream cheese, the dough is very thick. These cookies are soft and slightly chewy - be careful not to overbake - 5 min was enough. I used two different kinds of cookie sheet - the airbake sheets work best with this recipe.
