Tuna Salad in Whole Wheat Pita with Soy Crisps

what you need
  • 4 oz. albacore tuna, canned in water
  • 1/4 cup plain low-fat yogurt
  • 2 tbsp. diced red onion
  • 2 tbsp. diced celery
  • 2 tbsp. diced carrots
  • 1 tsp. lime juice
  • Salt and pepper to taste
  • 6 leaves Bibb lettuce
  • 4-inch wheat pita, cut in half
  • Snack-sized bag of soy crisps
make it
Mix tuna, yogurt, onion, celery, carrots, lime juice, salt, and pepper.

Slide the lettuce into the pita pockets. Divide tuna mixture in half and stuff into pockets.

Eat with soy crisps.
Notes
If you don't like tuna, opt for diced, grilled chicken breast.
