Makes: Depends on amount needed Total Time: 4 min
Category: Sauces/Marinades Sub Category: Sauces and Marinades

what you need
  • 1/2 bag C&H dark brown sugar
  • 3 Tbsp. granulated garlic
  • 1 Tbsp. salt
  • 1/2 Tbsp. black pepper
  • 1 big pinch ground oregano
  • 1 medium pinch ground Italian spices
  • For Beef: use 3 dashes groung nutmeg
  • For Pork: use 3 dashes ground cloves
make it
Mix everything together well and apply to meat. Mixing takes about 4 min, cooking time about 14 hrs. (14 hrs. for smoking/7 hrs. for grilling very slowly)

Make sure that your Smoker/Grill is very hot and stays that way for the duration of cooking this piece of meat.

Right after applying rub to meat, put the meat on the grill/smoker and only turn meat once about half way through the cooking time.

Because of the sugar in the rub mix the meat will get a very black crust formed in it, but the meat inside will be tender and juicy. If you choose to grill then place meat on side of grill farthest away from fire.
Depends on the amount of meat being cooked so everything is to your own taste.

Allow the wonderfully prepared piece of meat to rest for about 15 min before cutting into it. This will allow the juices to settle inside and not run while cutting.

Get ready your iced drink, baked potato, garlic bread, salad, and enjoy yourself.
