Hawaiian Pound Cake

what you need
  • 1 1/2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 2 1/2 cups self-rising flour
  • 1 tsp. vanilla extract
  • 1 small can crushed pineapple (undrained)
  • 1 cup flake coconut
  • 1 cup chopped pecans
  • Glaze:
  • 1 cup sugar
  • 1 cup water
  • 3 tsp. coconut extract
make it
Mix the first 5 ingredients until well blended. Fold in the pineapple, coconut and pecans.

Put in a greased tube pan and bake for 1 hour at 350°F.

Glaze: While cake is cooking, bring 1 cup of sugar and 1 cup of water to a boil and boil for 1 minute. Remove from heat, and then add 3 tsp. of coconut extract. When cake is done and while it is still hot, pour this over cake. Let sit for 20 minutes then remove from pan.
This cake is very simple and delicious! It is great with coffee or anytime. Enjoy!

Rated  by carmen1284 on 12/10/2009 This is one of the Best cake that does not need any Frosting.I make this all the time it is so easy, but I cut the syrup recipe in half. All my friend love it. I made one for my ex boyfriend and his brother called it the come back to me cake.
