Funky Bean Dip (FBD)

what you need
  • 1 lb. ground beef
  • 1 envelope taco seasoning
  • 1 can refried beans
  • 1/2 jar sliced jalapenos (hot)
  • 1/2 medium sized onion
  • 1 bag shredded cheddar or Mexican cheese

Preheat oven to 375 degrees F. Begin by browning ground beef. Drain and add package of taco seasoning and required amount of water stated on package. Cook until all water is gone, the less the better.

While this is simmering, in your 8x8 or 9x9 baking dish combine refried beans, jalapenos, and onion. Save a handful of onions to garnish dish later. Allow some of the juice from the jalapenos to get in mixture for thinner consistency. Once meat is done add to mixture and mix well. Use spoon to spread evenly in baking dish.

Place bean dip in oven and cook for 45 min or until bean dip begins to bubble. Remove from oven and sprinkle shredded cheese over top of bean dip, be generous. Sprinkle remainder of onion on top of cheese. Place back into oven to melt the cheese. Remove when melted, serve hot or warm.
This Funky Bean Dip is hot, temperature and spice. Use mild jalapenos if you do not like spicy foods! Let cool for 10 to 15 minutes or give it the blowing treatment to not burn your tongue.

Double the recipe for larger parties to fill an 11"x13" baking dish. This dish is very thick and requires the extra thick dipping corn tortilla chips.
