Easy and Yummy Chicken Pot Pie

what you need
  • 3 tablespoons butter
  • 1/4 cup flour
  • 1/4 cup chicken broth
  • 1 cup milk
  • 2 cups cooked cubed chicken
  • 1 can (drained) canned peas
  • 1/2 cup sliced carrots (or 1 can drained)
  • 2 tablespoons chopped onion
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon poultry seasoning
  • FLAKY PASTRY
  • 1 cup flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 3 tablespoons ice water
make it
Melt butter in large saucepan, add flour. Gradually add broth and milk. Cook until thickened. Stir in remaining ingredients.

Make pastry. Roll dough to 1/4" thickness. Pour pot pie mix into casserole (2 qt.) and top with crust.

Bake at 400°F for 30 minutes.
Notes
You may also add a can of drained corn along with the peas and carrots. It adds just a little extra.

Rated  by a cook on 6/15/2008 I don't cook often at all, in fact my boyfriend usually does ALL the cooking. But this recipe was so easy and fun to make. I already had most of the ingredients before making this, so it didn't cost much for me to make it. IT WAS EXCELLENT. I might start cooking more often. Thank You.
