Easy Cheesy Chicken, Rice, and Veggie Bake

what you need
  • 2 cans Veg-All Mixed Vegetables
  • 1 can each, cream of mushroom and cream of chicken soup
  • 2 cans chicken breast in broth (do not drain)
  • Salt, pepper, and seasonings of choice to taste
  • 2 bags boil in bag rice, cooked according to pkg. directions
  • 1 pkg. Kraft Shredded Sharp or Mild Cheddar Cheese

Preheat oven to 450 degrees F. Combine first 4 ingredients in large mixing bowl. Stir in rice.

Spread in 13x9x2 baking dish. Top with cheese.

Bake for 20-30 min or until heated through or until cheese is melted completely.
This recipe may be divided in half for smaller yield and may also be prepared in microwave, adjusting baking dish size accordingly.

I created this recipe in a pinch one day when unexpected dinner guests arrived. Making a mad dash to the kitchen, I began grabbing the ingredients on my shelves, fixed this dish, added a dinner salad, and had a great dinner with family and friends. It is always a hit and you can adjust the soup and cheese flavors to suit your own family's tastes.

If you have time, fresh chicken breasts may be prepared, cooked and cubed as substitution for the canned version. Freezes and reheats great!
