Lizzy's Mandarin Orange Cake

what you need
  • 1 yellow cake mix with pudding in the mix
  • 3 eggs
  • 3/4 cup vegetable oil
  • 1 lg. can mandarin oranges with juice
  • 1 small box vanilla instant pudding
  • 1 lg. can crushed pineapple (save juice)
  • 1 tub (12 oz.) Cool Whip
make it
Mix cake mix, eggs, oil and juice from mandarin oranges until creamy. Add oranges and beat until oranges are broken up.

Put into greased and floured 9x13 pan and bake for 40 minutes at 350°F.

Frosting - Drain pineapple and use the juice to mix the pudding (DO NOT ADD MILK). Once mixed up, fold in the Cool Whip. Fold in pineapple last. Frost cake and refrigerate until time to use.

Rated  by texgem57 on 11/17/2004 I've been making this cake for about 25 years. I simply drain the pineapple folding it and the dry pudding mix into the cool whip. I also used 2 (9") layer pans. It is always the hit of the meal or party. You can't go wrong with this one.
