Moist Pistachio Muffins

what you need
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 pkg. (3.4 oz.) instant pistachio pudding mix
make it
Preheat oven to 400 degrees F. Grease muffin tin. Beat egg with a fork. Stir in milk and oil. Stir in flour, baking powder, sugar, salt and pudding mix, just until moist. Batter will be lumpy.

Bake for 20-25 minutes.
The origin of this recipe came from a cafe I frequent. They use an industrial muffin mix to make these muffins. I thought I could experiment to see if I could come up with something comparable. This recipe is the result.
