Tacos and Leftover Dip

what you need
  • Tacos:
  • 1 lb. ground beef
  • 1 can refried beans
  • 1 pkg. taco seasoning
  • 1 small jar taco sauce
  • 1 pkg. taco shells
  • Lettuce
  • Tomato
  • Shredded Kraft cheese
  • Dip:
  • 2 lb. Kraft Velveeta Cheese
  • 2 cans Ro*Tel
make it
Brown ground beef. Drain. Add refried beans, taco seasoning and taco sauce. Simmer until well mixed and hot through.

Spoon meat mixture into heated taco shells. Top with lettuce, tomato and shredded cheese.

Dip:
Cube cheese and microwave on high for 3 minutes. Add Ro*Tel and return to microwave until cheese is melted. Serve with tortilla chips.
Notes
Leftover Dip:
Mix leftover meat from tacos with leftover dip. Microwave until hot.

I normally serve the tacos one day and save the leftovers to make dip for the next day and serve with hamburgers or hot dogs.

Also great to have as a meal when you know you need something to take to a finger food event the next day.

Leftover dip over tortilla chips with lettuce and tomato makes a great taco salad.
