Crock-Pot Tortellini Soup

what you need
  • 2 cans (14-1/2 ounce each) vegetable or beef broth
  • 1 - 1 1/2 lbs. ground beef or Italian sausage; browned, drained & rinsed
  • 1 can (15-1/4 ounce) whole kernel corn, drained6 green onions, chopped
  • 2 garlic cloves, crushed through a press or minced
  • 1/4 tablespoons chopped fresh basil
  • 1 can (28 ounce) diced tomatoes
  • 1 red bell pepper, chopped
  • 2 cups chopped zucchini (about one medium)
  • 1 pkg. (9 oz.) tortellini; any flavor
  • 1/2 teaspoon garlic pepper
  • Grated parmesan, over the top for serving
make it
In a 4-quart crock-pot, mix together all ingredients except cheese.

Cover and cook on high for about 3-1/2 to 4 hours or until the tortellini are tender.

Do not overcook or the tortellini will become mushy. Serve immediately, topped with parmesan.
Notes
You can add more than 9 ounces of tortellini. You can also add about 1 cup chopped prosciutto ham, if desired.

My hubby doesn't care for soup but really loves this soup.
