Easy Lowfat Pineapple-Walnut Cupcakes

what you need
  • 1 package super moist yellow cake mix with pudding in the mix
  • 1 1/4 cup pineapple juice
  • 4 egg whites (or egg substitute to equal two eggs)
  • 1 cup no fat sour cream
  • 3/8 cup chopped walnuts
make it
Preheat oven to 350 degrees
1. Line muffin tins with cup cake liners. (makes 24)
2. In large mixing bowl, combine cake mix and juice. Mix well.
3. Add egg whites (or egg substitute). Mix well.
4. Blend in sour cream.
5. Fill cup cake liners 3/4 full.
6. Sprinkle walnuts over top of cupcakes.
7. Bake in 350 degree oven for 23-28 minutes.
8. Cool on wire rack.
Notes
These make an airy light summer cupcake great with fresh strawberries on the side.
