Momma's Meatloaf

what you need
  • 2 lb. ground beef
  • 1 cup Progresso Italian Style bread crumbs
  • 1 Tablespoon salt & sprinkle of pepper
  • 1 Tablespoon garlic powder
  • 3 well beaten eggs
  • 1 can cream of mushroom soup, divided
  • 1 pack brown gravy mix (mix as directed on package)

In a large mixing bowl, place ground beef, bread crumbs, salt, pepper, garlic powder, eggs, & 1/2 can of soup; with hands, mix well.

When well mixed, mold the meatloaf into a large, smooth meatball, and place into a large pot. Cover with aluminum foil and put in a 300 degree oven for about 45 minutes.

While meatloaf is baking, make brown gravy as directed on package; add the rest of soup, and one cup of water, stirring well. Remove from heat, and pour over meatloaf.

Recover the meatloaf and place back in the oven for another 30 minutes or until the gravy is the right consistency. Serve.
Notes
Some people like to stuff the meatloaf with hardboiled eggs, or bell peppers, and garlic. You would do this while molding into the meatball; simply make openings for what you want to stuff.
