Microwavable Hot Fudge Sundae Cake

what you need
  • 1 cup flour
  • 3/4 cup sugar
  • 2 Tbsp. + 1/4 cup cocoa powder, divided
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup skim milk
  • 2 Tbsp. canola oil
  • 1 tsp. vanilla
  • 1/2 cup chopped pecans
  • 1 cup packed brown sugar
  • 1-3/4 cup boiling water
  • Cool Whip
make it
1. In an ungreased 3-4 quart microwavable safe dish combine the flour, sugar, 2 Tbsp. cocoa powder, baking powder, and salt.
2. Stir in the milk, oil, and vanilla until combined.
3. Fold in nuts.
4. Combine brown sugar, and remaining cocoa powder and sprinkle over batter.
5. Pour boiling water over batter (DO NOT STIR!!).
6. Microwave uncovered on HIGH 9-10 minutes or until top of cake springs back when lightly touched.
7. Serve with a dollop of Cool Whip.
Notes
The nuts are optional. I used a 1000 watt microwave the 1st time I made this. It was also made in a 2-1/2 quart dish and it had spilled over. So it is highly recommended that you use a 3-4 quart dish.
