Fast and Easy Stuffed Peppers

what you need
  • 1 box Spanish rice
  • 1 lb. extra lean ground beef
  • 1/2 cup chopped onion
  • 1 can (14.5 oz.) stewed tomatoes
  • 6 medium size green peppers
  • 6 slices American cheese
make it
Brown rice, ground beef, and onion in large skillet. Add two cups water, seasoning mix from box of Spanish rice and stewed tomatoes to skillet. Bring to boil.

Place peppers in large casserole and put 1/2 slice cheese inside each one. Fill with rice mixture (in and around peppers).

Cover and cook in 350 degrees F oven for about 45 minutes. Top with remaining sliced cheese and let melt.
