Salmon Loaf with Dill Sauce

what you need
  • Salmon Loaf
  • 15 ounces Alaska salmon
  • 2 cups soft bread crumbs
  • 1/3 cup finely minced onions
  • 1/4 cup milk
  • 2 eggs
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon dill weed
  • Black pepper to taste
  • Creamy Dill Sauce
  • 1/4 cup half & half or light cream
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste
  • 1 tablespoon butter

Salmon Loaf
Drain and flake salmon, reserving 2 tablespoons liquid. Combine flaked salmon and reserved liquid with remaining ingredients.

Place in well-greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan or shape into loaf on greased baking pan. Bake at 350ºF for 45 minutes.

Creamy Dill Sauce

In a 1 cup glass measuring cup combine all ingredients. Cook on high for 1 minute or until sauce comes to a boil. Pour hot sauce over Salmon Loaf.
Notes
The Creamy Dill sauce is also delicious over steamed veggies!
