Berry Cloud Cake

what you need
  • 1 butter recipe cake mix prefer white, may use yellow or chocolate lovers use chocolate
  • 1 stick softened not melted butter or margarine
  • 3 eggs
  • 1/2 to 3/4 cup water less than cake mix requires
  • 2 pkg. (8 oz. each) softened cream cheese
  • 1/2 cup sugar or sugar substitute
  • 1/2 teaspoon pure vanilla extract
  • 12 oz. Cool Whip, any flavor slightly thawed
  • 1 quart fresh berries (may use frozen) strawberries, raspberries, and or blueberries

Place cake mix in large bowl, softened margarine or butter. Add 3 eggs. 1/2 to 3/4 cup water batter should be thick and smooth batter.

May be baked in sheet pan and/or 2 8 or 9 inch cake pans or excellent cupcakes. Bake @ 350 for 30- 35 minutes depending on oven. Cool completely.

Place cream cheese (softened) in large bowl with vanilla and sugar or sub. Mix until thick and smooth, mix Cool Whip in until its thick, smooth and fluffy like a cloud.

Place berries in large bowl with sugar or sub. Mix until covered. Place cloud cream cheese over cake then berries. Great for Labor Day. ENJOY!
Only use butter or margarine may use softened margarine in bowl

Fat free Cool Whip is excellent.
