Chicken Sandwich Loaf Cake

what you need
  • 10 lb. Chicken
  • 2 jars (16 oz. each) sweet pickle relish
  • 48 oz. Kraft Miracle Whip Dressing
  • 4 loaves of bread
  • 2 pkg. (8 oz. each) Kraft Philadelphia cream cheese
  • 2 containers (16 oz. each) Cool Whip
  • 2 cans pineapples slices
  • 1 pkg. chopped pecans
make it
Boil chicken without skin or bone or whatever your preference is. Let chicken cool or refrigerate overnight then shred in food processor. I like to use white and dark meat mixed otherwise the white meat is too dry.

Mix sweet pickles (relish) and Miracle Whip Dressing together with chicken.

Cover a board with foil or use a large baking sheet.

Remove crust from bread slices and place on board (one layer).
Spread chicken mixture on bread.
Place another layer of bread slices without crust on top of chicken spread.

In a large bowl soften the Kraft Philadelphia cream cheese with mixer. Add Cool Whip to it. Open a can of pineapple circles and and add some of the juice to mixture, not too much. Spread some of the mixture on top of the second layer of bread.

Place another layer of bread on top of Cool Whip Mixture, then more chicken, and more bread.

On top of fourth layer of bread add remainder of Cool Whip Mixture. Garnish with Pineapple Rings and Pecans.

It will feed about 50 people. You can cut recipe down to fit occassion. Goes good with chips and dips.

My sister Dalia makes this, and it's always the first to be eaten at any party.
