Mom's Carrot Cake

what you need
  • 1 cup oil
  • 1 cup sugar
  • 3 eggs
  • 1 1/3 tsp. baking soda
  • 1 1/3 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/3 tsp. cloves
  • 1 1/3 tsp salt
  • 1 1/3 cups flour
  • 2 cups grated carrots
  • 1/2 cup raisins
  • Cream Cheese Icing
  • 1 pkg. cream cheese
  • ½ cup soft butter or margarine
  • 2-3 cups icing sugar
  • 2 tsp. vanilla
make it
Beat together oil, sugar, and eggs added 1 at a time. Add dry ingredients: baking soda, baking powder, cinnamon & cloves, salt, flour, grated carrots and raisins. (Add the raisins to the dry ingredients to coat them with flour so they don’t sink to the bottom.) Mix together.

Bake at 325 for 45 minutes.

Cream Cheese Icing
Beat cream cheese and butter until smooth. Gradually add icing sugar, beating constantly. Mix in vanilla. Spread on cooled cake.

Rated  by VegasFem on 1/11/2006 The original poster neglected to state size of pan and whether it should be greased/ungreased/greased & floured. As a seasoned cook, I assumed 13x9x2" pan, which is standard for most carrot cakes. I also greased & floured my pan. People, double-check your recipes before you submit them.....don't make it hard on the beginner cooks.
