Warm Spinach-Artichoke/Reserved Dip

what you need
  • 1 pkg. (10 oz.) frozen chopped spinach
  • 1 pkg. (8 oz.) Kraft Light Philadelphia Cream Cheese, softened
  • 2 Tbsp. Kraft Light Grated Parmesan Cheese
  • 1 jar (6 oz.) marinated artichoke hearts, drained and liquid reserved
  • 2 Tbsp. finely chopped onion
  • 1/2 cup Kraft Shredded Low-Moisture Part-Skim Mozzarella Cheese

Use microwave safe bowl (read label) or place package of spinach in water and boil until thawed, squeeze spinach dry.

In medium bowl, using electric mixer on high speed, combine spinach, cream cheese, grated cheese and reserved artichoke liquid, until cream cheese is smooth. Chop artichoke hearts and stir into cream cheese mixture, and then stir in onion and mozzarella cheese.

Put into a 9x9-inch microwave safe pan and put in microwave for 2-1/2-3 minutes until mixture is heated through. Serve with tortilla chips.

Rated  by a cook on 1/27/2006 Loved this recipe, I always go out to eat and order spinach artichoke dip and it gets expensive, this fed that craving nicely. The flavor is breath taking.
