Warm Greek Shrimp Salad

what you need
  • 1 chopped small red onion
  • 1 chopped med. red pepper
  • 1 pound large, ready-to-cook shrimp
  • 1/4 bottle oil and vinegar dressing
  • 1/3 cup halved, pitted Kalamata olives
  • 1/4 cup bottled dressing
  • 1 Tbsp. lemon juice
  • 2 tsp. grated lemon zest
  • 9 oz. bag pre-washed baby spinach
  • Crumbled feta cheese
make it
Coat a large nonstick skillet with nonstick spray. Heat on med-high heat. Add onion and red pepper. Saute 2 min. or until soft.

Add the shrimp and oil and vinegar dressing. Cook just until shrimp are done (about 3 min.) Remove from heat.

Stir in olives, bottled dressing, lemon juice and zest. Immediately pour over the spinach; sprinkle with cheese.
