VERY Healthy TURKEY Meatloaf

what you need
  • 1 tablespoon margarine
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 pkg. (20 oz.) EXTRA LEAN ground turkey breast
  • 1/2 cup fresh bread crumbs
  • 1 large egg
  • 3/4 cup ketchup, divided
  • 2 teaspoons Worcestershire sauce
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Preheat oven to 350 degrees. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally.

Transfer mixture to a large bowl; cool 5 minutes. Add turkey, bread crumbs, egg, 1/4 cup ketchup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8 x 4-inch loaf pan. Spread remaining 1/2 cup catsup over top.

Bake for 50 to 55 minutes or until no longer pink in center and internal temperature of loaf reaches 165 degrees. Let stand at room temperature 5 minutes before slicing.
Notes
Very important to use EXTRA LEAN turkey breast only, not just ground turkey. That is much higher in fat. If you have a meatloaf separator pan (double layer nested pan that allows the grease, etc. to drip through to the bottom leaving the meatloaf not greasy), that is the best for this recipe.

Rated  by TimsPersonalChef on 2/16/2010 I have made this several times and its VERY good and I'm not even a meatloaf fan! I used italian bread crumbs instead of plain ones and I put bbq/ketchup/w. sauce mixture on top. Delish!
