Ground Beef Porcupine Balls

what you need
  • 1 pound ground beef
  • 1/2 cup yellow or white onion, diced
  • 1 cup white or brown uncooked instant rice
  • 1 can tomato soup
  • 1 cup water
make it
In large mixing bowl, combine uncooked ground beef, onion, and instant rice. Mix thoroughly and form into 2 inch meatballs.

Place in large skillet over medium heat and cook approximately 15 minutes or until thoroughly cooked.

Mix tomato soup and water; pour over meatballs in skillet. Cover and simmer 15 minutes. Enjoy!
Notes
This is an easy dish to prepare! I normally use lean ground beef and brown rice but it can also be made with ground turkey. You can add as much or as little onion as you prefer. It can be served alone or over rice.
