AARRGH Pie (Apple and Rhubarb-Raisin Good Homemade Pie)

what you need
  • 1 package (14 oz.) frozen rhubarb slices-defrosted
  • 6 granny smith apples, peeled and sliced thin
  • 1 cup raisins
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2 cups sugar
  • 1/4 cup flour
  • 1 pre-made deep-dish pie crust
  • 1/4 cup sugar
  • 1/2 cup flour
  • 1/4 cup butter
make it
Preheat oven to 400 degrees F. Place rhubarb, apple slices, and raisins in bowl. Add lemon juice and spices. Allow to sit for 10 minutes. Then, add sugar and mix thoroughly. Add 1/4 cup flour and mix well. Ingredients make be a little juice, but that's okay. Add to pie shell.

In separate bowl, add 1/4 cup sugar and 1/2 cup flour. Mix well. Using a fork, cut in the 1/4 cup butter. Mix well; until crumbly. Add to top of pie mixture.

Bake in oven until crust is golden brown, about 1 hour. Serves with Cool Whip or ice cream. Enjoy.
Notes
If pie browns too quickly on top; cover lightly with foil for remainder of cooking time.

My son loves rhubarb, and I am constantly looking for new ways to prepare it so that he doesn't get bored with the same old pie.

One day, he wanted a pie-again. I didn't have enough rhubarb to make a pie, so in frustration I improvised with apples and raisins and spices. Hence the name-AARRGH Pie!
