Jane's Baked & Breaded Garlic Chicken

what you need
  • 1 package boneless chicken breasts
  • 1 tsp. salt *optional*
  • 1/2 cup flour
  • 1 cup bread crumbs *Italian flavored is best*
  • 1 Tbsp. olive oil
  • 1/2 cup water
  • 4 Tbsp. butter
  • 8 Tbsp. chopped or minced garlic

Preheat oven to 425 degrees. Split the chicken breasts (or leave whole for 2 servings). Lightly salt the chicken on both sides.

Put flour in one shallow plate and bread crumbs in another. Coat each breast in flour, dip in water, and then coat in bread crumbs (repeat for a thicker crust skipping the flour step). Brown the breast in hot skillet with olive oil.

In non-stick baking dish (glass works best), place 1/2 Tbsp. butter for each chicken breast and 1 Tbsp. of garlic. Place browned chicken on top of butter and garlic. Add another 1/2 Tbsp. of butter and 1 tbsp of garlic on top of each chicken breast. Bake for 20 minutes or until done.
