Imitation Lobster Casserole

what you need
  • 2 lb. haddock
  • 1/4 tsp. salt
  • 1 can cream of shrimp soup
  • 1 Tbsp. lemon juice
  • 1/2 tsp. minced onion
  • 1/8 tsp. garlic powder
  • 1/4 cup melted butter
  • 1/2 tsp. Worcestershire sauce
  • 1 cup crushed Ritz Crackers

Place fish in a greased 2 quart casserole dish. Sprinkle with salt. Mix soup and lemon juice. Pour over fish.

Bake uncovered for 20 minutes at 375 degrees F.

While baking, saute onion and garlic powder in butter. Remove from heat and add Worcestershire sauce. Then blend with cracker crumbs. Sprinkle crumb mixture over fish and bake for 10 minutes more.
You can substitute cooking sherry for lemon juice and/or monkfish fillets for haddock if preferred.
