Makes: 4 servings Total Time: 30 min
Category: Dinner Entrees Sub Category: Chicken & Turkey Entrees

what you need
  • 1/2 tsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 3 oz. buttermilk
  • 3/4 cups cornflake crumbs
  • 1 lb. boneless skinless chicken breasts (4 pieces)
make it
Preheat oven to 365 degrees. Combine flour, salt, and cayenne pepper in a medium bowl. Put buttermilk and cornflake crumbs in 2 separate shallow bowls. Roll chicken in flour mixture and evenly coat each piece. Dip chicken into buttermilk and then cornflake crumbs.

Place coated chicken breasts in 8 x 8-inch baking dish lightly coated with nonstick cooking spray.

Bake 20 minutes or until chicken is tender and no longer pink.
Notes
Coating chicken breasts in buttermilk keeps the fat content down in this family-favorite entree.

Rated  by Max011 on 11/22/2010 This was easy and fast, turning out great. I used thighs, doubled the receipe and added more time. They came out flavorful and crunchy. I had rice and a tossed salad to go with it.
