Easy Tilapia Dinner

what you need
  • 1 frozen tilapia filet
  • 1 tsp. lemon juice
  • Salt & pepper to taste (optional)
  • 1/2-1 cup red, green and yellow sliced bell peppers
  • 1 small can mushrooms or 1/2 cup chopped, fresh mushrooms
  • 1 Tbsp. butter or margarine
  • 1 cup cooked white rice
make it
Heat tilapia filet in frying pan to defrost. Add lemon juice and spices to taste.

Mix bell peppers, mushrooms and butter in separate skillet. Heat approx. 15 minutes to blend flavors. Pour mixture over fish, heat until tilapia is white in the center and flakes easily.

Serve fish and vegetables over rice. Easy to multiply to make more than one serving.
Notes
Butter not necessary, can substitute or leave out. Any other spices you may want to try can be used as well. If you are watching carbohydrates, eat this meal without the rice.
