Mom's Strawberry Cake

what you need
  • 1 white cake mix
  • 1 box (3 oz.) Jell-O Strawberry Flavor Gelatin
  • 1/2 cup water
  • 1 pkg. (10 oz.) frozen strawberries, thawed & divided
  • 1/2 cup oil
  • 4 eggs, separated
  • 1/2 cup butter or margarine (1 stick)
  • remaining strawberries
  • 1 lb. box confectioners' sugar
make it
Preheat oven to 350°F. In a large mixing bowl, combine cake mix, Strawberry Jell-O, water, 1/2 of the strawberries, oil, & egg yolks. Mix on medium speed approximately 2 minutes or until blended. Stir in stiffly beaten egg whites.

Pour into oblong cake pan that has been lightly greased & floured. Bake 45 minutes or until done. Cool completely before icing.

Icing:
Blend butter, remaining strawberries, and confectioners' sugar in blender to form a thick, smooth icing. Spread on cooled cake.
Notes
This recipe was given to me by my mother-in-law. If it is baked in a foil pan with plastic cover, it makes a great dessert cake for potlucks or gift giving.

Rated  by tliciouss on 6/9/2008 I dont know why this didnt post first. this s a delicious recipe my mother always made when we were kids. I also made it for my kids whem they were small. My oldest is 25 and stll asks for it for her "Birthday" cake!! But as I said b4 we put the topping on while still hot. MMMMMmmmmmmmmm
