Parmesan Crusted Pork Chops

what you need
  • 1 1/4 cups Stove Top Stuffing Mix for Turkey
  • 1 cup shredded parmesan cheese
  • 1/2 teaspoon garlic powder
  • 2 large eggs
  • 1/4 cup all purpose flour
  • Salt
  • Pepper
  • 6 boneless pork chops (3/4" thick)
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Preheat oven to 425°F. Add stuffing mix to Ziploc bag and crush with rolling pin, add cheese and garlic powder. Whisk eggs in medium bowl. Place flour on a plate and season well with salt, pepper and garlic powder. Coat pork chops with flour on all sides, shake off excess flour, dip into egg mixture and then into stuffing mixture.

Melt butter and oil on medium high and cook chops until golden brown, about 2 minutes on medium high.

Transfer chops to cookie sheet and bake for 15 to 20 minutes or until meat thermometer reads 150°F.
This is the 1st time ever that I have run out of regular breadcrumbs and the 1st time I've had Stove Top Stuffing in the house. I have made this so many times, but never with the addition of the stuffing mix. WOW!!!! I can't tell you how amazing this recipe came out with only one ingredient change. My family loved it and so will yours! Enjoy!!!
