Zucchini "Apple" Pie

what you need
  • 4 cups sliced zucchini, cooked
  • 2 Tbsp. lemon juice
  • 1 & 1/4 cups sugar
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. cream of tartar
  • Dash nutmeg
  • 3 Tbsp. flour
  • 9-inch pie crust with top
  • Butter - for top of pie
make it
Toss together cooked zucchini and lemon juice. Mix in another bowl all other ingredients then mix with zucchini. It will be runny.

Dump into a 9 inch crust, dot with butter. Add top crust.

Bake at 400°F for 40 minutes.
Notes
Use BIG zucchini. Peel, remove seeds and cut into chunks. Just cook long enough to start to get tender. This tastes just like apple pie.
