Easy Microwave Peanut Brittle

what you need
  • 1 cup sugar
  • 1/2 cup white Karo syrup
  • 2 cups peanuts, salted & roasted OR RAW peanuts & 1/4 tsp. salt
  • 1 Tbsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda
make it
In an 8 cup microwavable casserole dish, mix sugar, Karo and peanuts, IF RAW, COOK on HIGH for 5 min…should be boiling in all areas. COOK for 1 min & 15 sec longer. (Add salted, roasted peanuts here.) STIR and cook on HIGH for 3-5 min, until nuts are brown.

Remove and add butter and vanilla and stir to blend well. Microwave on HIGH for 1-2 more minutes, until peanuts are lightly browned and syrup is very thick. Threads should form when syrup drips off the WOODEN spoon. Remove from microwave and QUICKLY add the baking SODA and stir gently, until uniformly light and foamy.

QUICKLY pour the mixture onto a heavily greased nonstick baking sheet. Spread as quickly as possible. Let cool, until hard and brittle, about 20 minutes, then release from the baking sheet by bending sheet slightly. Break into small pieces and store in an airtight container.
I dip my wooden spoon in vegetable oil BEFORE using. You could also butter it.
