what you need
  • 1/2 package tater tots
  • 4-5 slices deli ham, diced
  • 6 eggs or 1 small carton egg beaters, divided
  • 1/2 tsp. garlic powder
  • 1 tsp. cumin
  • Sprinkle of black pepper
  • May add your favorite spices -- Mrs. Dash works good too
  • 1/2 cup Kraft 2% Milk Shredded Cheese
  • 2 green onions
  • Salsa and sour cream for topping

In a large skillet add tater tots on med heat till they start to soften. Break up into small pieces. Add the ham and continue cooking.

Set aside a 1/4 cup of the cheese to sprinkle over the top when done. Whisk the eggs together, then add each of the spices and blend. Next add the cheese and green onions. After they are all mixed add to the potatoes and ham in the skillet. Cook till eggs are done.

Sprinkle with remaining cheese and a dollop of sour cream and serve.
Can substitute any of your favorites. Add more veggies.

To make it vegetarian green pepper, tomatoes, spinach, or add different meats: sausage, bratwurst, whatever sounds good.

We use fat free sour cream and low fat cheese to help with fat grams.
