what you need
  • 2 packages (8 oz.) Philadelphia Cream Cheese--regular or low fat, your choice
  • 3/4 cup sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 tablespoon vanilla
  • 24 Nabisco Vanilla Wafer cookies
  • Cupcake muffin papers
  • 1 can pie filling--cherry, strawberry, or blueberry--your choice
make it
Beat cream cheese, sugar, eggs, juice and vanilla until fluffy.

In bottom of paper muffin, place 1 Nilla wafer, and then fill 2/3 full with cream cheese filling.

Bake 15-20 minutes at 350 degrees F. Cool, then top with your choice of pie filling flavor. Refrigerate till serving time.
This is not an original recipe but one that I make every Christmas and include with my cookie gifts to family and friends. I will use decorator papers, either the silver ones or Christmas theme ones and the cherry cheesecakes look very Christmassy and taste wonderful. Just a little cheesecake snack, instead of a big piece. Enjoy everyone.

Rated  by a cook on 12/13/2010 I wasn't sure exactly how long to beat till fluffy. Mine never really looked "fluffy". Taste was good.
