Our Family's "Special" Banana Bread

what you need
  • 1/2 cup oil
  • 1 cup sugar
  • 1/2 tsp. salt
  • 2 eggs, well beaten
  • 1 cup all purpose flour
  • 1 cup Bisquick
  • 1/2 tsp. baking soda
  • 4 medium mashed bananas
  • 2 aluminum baking loaf pans

PLACE oven rack in middle position. Then preheat oven to 325°F. Grease loaf pans with cooking spray, and set aside. In a large bowl, make batter by mixing oil and sugar together. Add salt; mix. Add beaten eggs; mix. In a small bowl, gently mix dry ingredients together (flour, Bisquick, and baking soda) with a fork. Slowly stir dry ingredients into batter; mix just until blended. Add mashed bananas; stir.

PLACE loaf pans on a large cookie sheet for support, and ease in handling. Divide batter evenly between the two prepared loaf pans.

Bake in preheated oven for 35 minutes, the give the cookie sheet a half-turn, and continue to bake for an additional 10 minutes. Loaves should be golden brown on top. REMOVE cookie sheet from oven, and place loaf pans on a wire rack to cool for 10 minutes. Remove leaves from pans and allow to completely cool on wire rack, or go ahead and serve while the bread is still warm!! Either way, it's delicious!! Enjoy!!
