No Bake Coconut Cheesecake

what you need
  • 1 pkg. (8 ounce) Philadelphia Cream Cheese
  • 1 1/4 cups milk, divided
  • 1 cup coconut
  • 1 tsp. vanilla
  • 1 sm. pkg. Jell-O Vanilla Instant Pudding (can be low fat or regular)
  • 1 cup Cool Whip
  • 1 (9 inch) graham cracker pie crust
make it
In a large mixing bowl, blend cream cheese with 1/4 cup milk until smooth. Add rest of milk, coconut and vanilla, mix until well blended. Add pudding and beat for about 1 minute. Stir in the Cool Whip.

Pour into graham cracker crust.

Refrigerate.
Notes
Note: if you are using low fat pudding you may want to use skim milk.

I had bought several pkg. Philadelphia Cream Cheese when they were on sale and needed to use them soon. I wanted to make a no bake coconut cheesecake, but could not find a recipe for one, so I decided to invent one. Here it is. My husband loves it.
