Cantaloupe Pie

Makes: 2 regular pies or 1 deep dish pie Total Time: 1 hr 30 min

what you need
  • 2 medium cantaloupes
  • 1/2 cup water
  • 2 cups sugar
  • 4 tablespoons flour or cornstarch
  • 1 stick butter or margarine
  • 4 egg yolks
  • 3 teaspoons vanilla
  • 1 pie crust
  • Meringue
make it
Peel cantaloupes, put in large pan, and cook over low heat till tender, drain. Use potato masher or electric mixer, blend till no lumps. Add sugar, flour or cornstarch, margarine or butter, and egg yolks. Cook over low heat till thick. Add vanilla.

Put into baked pie crust. Add meringue and brown.

Refrigerate for about an hour and serve.
Notes
This is a summer favorite with my family- I get some really strange looks when I take this to gatherings and I tell what it is, but after they try it, they are hooked and have to have the recipe.
