what you need
  • 1 1/4 cups canola oil
  • 2 cups sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 3 cups plain flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3 med. apples, peeled, cored, & diced
  • 1 cup chopped pecans (optional)
make it
Preheat oven to 325 degrees F. Combine oil, sugar, and eggs. Beat at medium speed for about 3 minutes. Add vanilla. Combine dry ingredients; add to wet mixture. Fold in diced apples and pecans. Do not use electric mixer after adding apples and pecans.

Pour into a greased and floured tube or bundt pan.

Bake for 1 hour and 20 minutes or until cake springs back when touched.
