Betty's Turkey Croquettes

what you need
  • Thick White Sauce
  • 6 tablespoons butter or margarine
  • 8 tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups milk
  • 1 medium onion
  • 2 stalks celery
  • 2 tablespoons butter or margarine
  • 4 cups finely chopped cooked turkey
  • Flavored bread crumbs
  • 2 eggs
  • 1/2 cup milk mixed
  • Canola oil for frying
make it
Thick white sauce: Slowly melt butter in saucepan (Do Not burn). Remove from heat. Add flour, salt and pepper. Slowly add milk. Return to heat and stir constantly. Bring to a boil, lower heat and simmer 1 minute.

Finely chop the onion and celery and saute in the butter until tender. Mix with the meat. Add the white sauce to the meat mixture and chill in refrigerator 2 hours.

Form mixture into balls. Combine eggs and milk. Dip balls in bread crumbs then in the egg/milk mixture and again into the bread crumbs.

Fry 3-5 minutes in the hot oil. Serve with gravy.

Rated  by lsm0916 on 4/24/2009 perfect for the leftover turkey. i just added garlic powder and parmesan cheese making an alfredo sauce, and shaping them into small balls for an appetizer. everyone loved them and wanted the recipe!
