Toasty Roast Beef and Ricotta Cheese Sandwich

what you need
  • A dash each of salt, pepper and garlic powder
  • 1/4 cup ricotta cheese
  • 1 or 2 tablespoons butter
  • 4 slices crusty Italian or French bread
  • 1 cup left-over shredded roast beef and onions from a pot-roast dinner
make it
Stir a dash each of the salt, pepper and garlic powder into the ricotta cheese and blend well.

Spread butter on one side of each piece of bread. Spread 1/4 of ricotta cheese mixture on other side of each slice of bread. Divide roast beef and onions evenly on two slices of bread. Top each meat covered bread slice with one remaining cheese spread bread slice.

Place in hot skillet or pre-heated sandwich press, butter side down. Grill until bread is golden brown and sandwich it heated through.
Notes
I prefer to use a sandwich press, but a hot skillet will do. I also re-heat the roast beef in the microwave for about 15 seconds, just so it isn't cold straight from the fridge. If you use cold roast beef it may not heat through by the time your bread is toasted.
