Banana Cupcakes

what you need
  • 1 box vanilla cake mix
  • 1/4 cup Jell-O Banana Cream Instant Pudding
  • 1 lg. or 2 sm. bananas, diced
  • 1 1/4 cups water
  • 1/3 cup oil
  • 3 eggs
  • 1/4 cup chopped walnuts (optional)
  • 1 tub cream cheese frosting
make it
Preheat oven to 350°F. Place all ingredients except walnuts and frosting into mixing bowl. Beat on low speed until blended. Then beat on medium speed for 2 minutes. Add optional walnuts beat until mixed.

Line cupcake pan with liners. Fill cupcake cups 2/3 full.

Bake for 24 minutes or until toothpick inserted into middle comes out clean. Cool and frost with cream cheese frosting.
Notes
I use a regular ice cream scooper to fill my cupcake cups. It provides just the right amount of batter for the perfect size cupcake.
