Spinach and Fruit Salad

what you need
  • 1 bag baby spinach leaves
  • 1 can pineapple tidbits
  • 1 can mandarin oranges
  • Fresh strawberries
  • Fresh or frozen blueberries
  • 1 red onion
  • Walnuts (or pecans or almonds)
  • 1 bottle poppyseed dressing
make it
Rinse spinach leaves and divide among dishes.

Drain pineapple and mandarin oranges and slice the strawberries, add to spinach along with blueberries.

Slice red onion and chop nuts and add to salad. Add poppyseed dressing to taste.
The amounts of fruit can vary depending on your favorites! You can also use different lettuce, like mixed, tender baby greens. You can also add other veggies like tomato and maybe bell pepper to give extra kick! Blue cheese crumbles are also a tasty addition!

Rated  by a cook on 6/26/2009 Very good! I brought to a potluck and there was very little left. I would not use the entire bottle of dressing. I found the sweetness of the fruit lessened the need for too much dressing.
