Zucchini Meatloaf

what you need
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • Sprinkle of basil
  • Meatloaf seasoning mixture
  • 1 1/2 cups zucchini-use instead of bread crumbs
  • 1 cup small onion
  • 1/2 cup ketchup (optional)
  • 2 lb. ground beef
make it
Preheat oven to 375°F. In large size bowl combine eggs, milk, basil, and meatloaf mix; mix well. Finely chop zucchini & onion, place in small bowl. In bowl of mixture, take a handful of meat and a handful of zucchini & onion mix together keep mixing a little at a time until all mix together.

Spray two meatloaf pans. Form meat into 2 loafs. Place in meatloaf pans.

Cover with tin-foil and bake for 1 hour or until done.
Notes
Using zuccinni instead of the bread crumbs make it moist. Plus it a great way to get kids it vegetables.
