Sherry's Most Favorite Eggplant Pizza

what you need
  • 1 large eggplant, peeled, coarsely chopped
  • 1 medium tomato, coarsely chopped
  • 1 red bell pepper, coarsely chopped
  • 1 medium onion, coarsely chopped
  • 1 medium-sized zucchini, coarsely chopped
  • 3 Tbsp. olive/canola oil mix, divided
  • 1 pkg. (14 oz.) prebaked Italian pizza crust
  • 2 cups Kraft shredded reduced-fat mozzarella cheese
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
make it
Heat a large skillet over med-high heat, and saute all veggies in 1 Tbsp. oil for 10 minutes or until tender.

Layer pizza crust evenly with cheese and eggplant mix. Sprinkle with basil and next 5 ingredients, drizzle with remaining 2 Tbsp. oil.

Bake in preheated 425 oven for 10 min or until golden.
Notes
I love the blending of flavors from the veggies and herbs.

Great healthy pizza, especially when you use whole wheat crust like I do.
