Sherry's Lemon Pepper Baked Cod

what you need
  • 1 Tbsp. margarine or butter
  • 1/3 cup reduced-fat baking mix
  • 1 Tbsp. yellow cornmeal
  • 1/2 tsp. paprika
  • 1/2 tsp. lemon pepper seasoning
  • 1/2 tsp. salt
  • 2 egg whites, slightly beaten
  • 1 pound cod (or sole or orange roughy)
make it
Preheat oven to 425°F. Melt butter in rectangular 13x9x2 pan, in oven. In bowl, stir together baking mix, cornmeal, paprika, lemon pepper seasoning and salt.

Dip fish into egg whites, then coat with baking mix. Place in pan.

Bake uncovered for 10 min. Turn fish, bake 10 min longer or until fish flakes easily with fork.
Notes
Very easy, but scrumptious fish dish. I serve w/ homemade french fries and salad.

Rated  by dendot1 on 12/16/2010 for those on low sodium restriction sustituting crushed, unsalted tortilla chips for baking mix, omitting salt and using instead Mrs Dash of your choice is very effective.
