Passover Oven Pancake

what you need
  • 6 eggs
  • 3 tablespoons oil
  • 1 teaspoon vanilla
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup potato starch
  • 1/4 cup cake meal
make it
Preheat oven to 400 degrees F. Beat eggs until lemon yellow. Add oil and vanilla. Mix dry ingredients together and mix evenly adding a tablespoon of dry ingredients to the wet until mixed evenly.

Line a 9-inch cake pan with parchment paper. Pour batter.

Bake for 20 minutes.
My goal was to find a substitute for oven pancake. We have a rule in our home that we never want anything to taste like Passover. This easily fits that bill. Serve in slices. My kids use butter and syrup.
