Ham, Veggie & Noodle Casserole

what you need
  • 2 cups medium-wide no-yolk egg noodles
  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup frozen baby peas
  • 2 eggs
  • 2 servings egg product, such as Egg Beaters
  • 1-1/2 cups 2% milk
  • 1 tsp. Dijon mustard
  • 1/2 tsp. lemon-pepper seasoning
  • 1/4 tsp. salt
  • 1 cup diced Oscar Mayer Ham
  • 1 cup shredded Kraft Sharp Cheddar Cheese

Preheat oven to 350°F. Spray an 8" baking dish with cooking spray. Cook noodles as directed. Drain, rinse under cold water, and drain well.

In large skillet over med-high heat, heat oil, cook onion and bell pepper until soft. Add peas. Cook and stir 1 min. In medium bowl, whisk eggs, egg product, milk, mustard, lemon-pepper seasoning, and salt.

Layer noodles, ham, 1/2 cup of cheese and veggies in baking dish. Pour in egg mix. Top with remaining cheese.

Bake 45 min, or until knife inserted in center comes out clean. Cool for 10 min.
I made this one day with ingredients I had on hand, and everybody loved it.

I served with a simple salad and everyone was happy!
